Sunsets over St. Joseph Bay

RECIPES

Baked Cheese Grits 3 cups water 2 eggs, beaten 3/4 cups grilts 1/2 tsp. salt 2 Tsp. butter hot sauce to taste 1 1/2 C. grated cheddar 1/4 - 1/2 tsp. garlic powder Cook grits as usual, then add butter, cheese, garlic and hot sauce.  Cook until the cheese has melted.  Add eggs slowly, then pour into 1 1/2 qt. casserole dish.  Bake 1 hour at 350 degrees F.  Dust with paprika before serving.

Florida Keys Key Lime Pie Combine a 14 ounce can of sweetened condensed milk with 4 egg yolks at low speed.  Slowly add four ounces of Key lim juice until well blended.  Pour into 9-inch graham cracker or pastry pie shell.  To prepare pie meringue, beat four egg whites with 2 tablespoons of sugar until peaks form. Spoon meringue on top of pie filling and bake at 375 degrees Farenheit until meringue is lightly browned.  Refrigerate or enjoy immediately!
