Catfish

Classic

The Annual Florida Catfish Classic held at Lake Alice Park was a success!  With over 245 fisherman and 122 boats in the contest, the day proved to be filled with fun and excitement for all. 

Of the contestants, Justin Smith was the lucky winner of a boat, motor, and trailer door prize.  For the Lady Anglers, Becky Smith of Altha won $250 for her 17.29 lb. flathead.  For the Channel Catfish, Kenny Byrd of Defuniak Springs won $1000 with his 9.34 lb. fish.  Alex Rushing of Ponce de Leon won $1500 dollars along with a 25 horsepower Tahatsu outboard motor for his 43.52 lb. flathead catch.

Twenty-two young ones showed up for the kids' tournament, ages 14 and under.  10 year old Tyler Feijoo of Bradenton won $325 for his 7.11 lb. channel catfish.  8 year old Flint Walker of Bristol, FL won $300 for his 3.54 lb. catch.  Great job everyone!

RECIPES

Baked Cheese Grits

3 cups water
2 eggs, beaten
3/4 cups grilts
1/2 tsp. salt
2 Tsp. butter
hot sauce to taste
1 1/2 C. grated cheddar
1/4 - 1/2 tsp. garlic powder

Cook grits as usual, then add butter, cheese, garlic and hot sauce.  Cook until the cheese has melted.  Add eggs slowly, then pour into 1 1/2 qt. casserole dish.  Bake 1 hour at 350 degrees F.  Dust with paprika before serving.

Florida Keys Key Lime Pie

Combine a 14 ounce can of sweetened condensed milk with 4 egg yolks at low speed. 
Slowly add four ounces of Key lim juice until well blended. 
Pour into 9-inch graham cracker or pastry pie shell. 
To prepare pie meringue, beat four egg whites with 2 tablespoons of sugar until peaks form.
Spoon meringue on top of pie filling and bake at 375 degrees Farenheit until meringue is lightly browned. 
Refrigerate or enjoy immediately!
