Enjoy the tranquility of nature on a tour of St. Joseph Bay.
Choose from the following guided tours with hosts Dan and Debbie VanVleet:

Eco-Tour
Fishing Trips
Snorkeling Trips
Scallop Diving Trips (July 1 - September 10 each year)

The shallow waters of St. Joseph Bay provide a clear view of the grass beds and sand flats below as you paddle silently along. You'll see redfish swirling on the surface, mullet jumping out of your way, and schools of bait fish running from some unknown predator. In the deeper channels around Black's Island you may find bottle-nosed dolphin frolicking or seaturtles surfacing for a breath of fresh air. Less active are the numerous horseshoe crab, starfish, and live shells you'll see mosying along the bay bottom.

Crust:
1 cup Parmesan Cheese, grated
1 1/2 cups dry bread crumbs
2/3 cup butter, melted
1 tsp. black pepper

Filling:
20 ounces cream cheese, room temp.
3 eggs
1/3 cup heavy cream
1 lb. crabmeat
1 lb. green onion diced
1/2 cup green bell pepper, diced
1/2 cup red bell pepper, diced
2 tsp. garlic, minced
3/4 cup Cheddar cheese, shredded

Preparation:

Combine crust ingredients well and press into a 10 x 15 inch cookie sheet, bake at 350 degree F for 10 minutes.  Remove and cool.

Saute diced onions, peppers, and garlic in butter until soft, add crabmeat and continue to cook for 1 minute.  Remove from heat and cool completely.  Beat cream cheese, eggs, and cream with an electric mixer until smooth.

Add crabmeat mixture and cheddar cheese to cream cheese mixture.  Mix thoroughly and spread evenly onto prepared crust.

Bake at 325 degrees F for approximately 30 minutes and top has become lightly browned.

Cut into squares and serve on a platter garnished with copped parsley and green onions.

Makes 20-24 squares depending on desired size.
